Chickory is something I’ve experimented with in the past. It has a mild flavor that’s pretty tasty. With just rinsing it off, it can easily be added to a salad raw without anyone being the wiser. I could easily see getting a good amount of this as a stand alone salad green. It hasn’t become available yet here and it’s been over a year since I tried it, so it’s hard to describe it better. When I start seeing it growing around here again, I’ll give a more in depth description of it.
